
This qualification is designed for learners with an interest in food and cookery. It will provide you with experience of using different cooking techniques and methods to enable you to use these within further education or apprenticeships. It will give you a basic understanding of the skills required for a career in food. You will know about: • safe and hygienic preparation of the cooking environment, the sources and seasonality that can affect food choices, food labels and cooking for a range of purposes. You will develop skills: • in creating menus to meet a brief • in selecting ingredients to cook dishes • in adapting recipes for health • in evaluating their own work • in Literacy, Numeracy and ICT • that are essential for the modern workplace, such as planning, research skills, communication, problem-solving skills and health and safety.

The qualification consists of 4 units Unit 01 Preparing to cook - internally assessed portfolio of evidence Unit 02 Understanding food - internally assessed portfolio of evidence Unit 03 Exploring balanced diets - externally set and marked assessment paper Unit 04 Plan and produce dishes in response to a brief - internally assessed portfolio of evidence All of the above units are mandatory. You will produce a portfolio of work which is assessed against the module criteria for each of the internally assessed units. This work will be moderated by the exam board. You will complete an externally set and marked assessment paper.
